…lots of FIGHT. Not the naughty, duff-you-in-the-face kind, but the ‘damn you Swine Flu, I will fight you off’ kind!! Remember in my last post, I showed you all a simply wunderbar picture of my fittie mamma going off to a party? Well, some *lovely* person who went to the same party had Swine Flu – and has promptly given it to my mum. Thanks for that. As I type this, she’s laid up in bed, with a temperature, a bowl, lots of sniffing and lots of drugs (the good kind, not the nasty kind). Poor lady! The implications of her illness?

  • I miss her! I love having my mum home, but it sucks that she’s upset and sick, and I can’t do squat about it (bar feed her a Green Monster, as I did today – i figure spinach, milk, chia seeds, and maca powder can only do good!). I feel helpless though! I can’t make her better 😦
  • She can’t pick my sister up from the airport on Christmas Eve (Hannah’s been away on her gap year, and returns 5am on Friday. Apparently. If Heathrow can pull its act together. Seriously, 5 inches of snow and it shuts down??? Bah.)
  • We will have to postpone Christmas – Christmas without my mum bouncing about would be the crappest thing ever – she’s the life and soul, y’all!
  • She sure doesn’t deserve to be ill. No-one does I know – but especially not my mum; she’s the most wonderful woman in the world and IT’s. NOT. FAIR.

Talking of illness – I was ill on Saturday! I woke up feeling like junk, achey body, shivery, a football in my throat etc etc – and thought I had flu. But, food fights flu! So I opened up a packet of chocolate Amazing Grass (I got a sample online):

Chugged it down with soya milk/water, and voila! Come Sunday, I felt 10 x better! I still have a cough and a slight wheeze atm, but it sure ain’t bad, and I’ve still had 3 fabby runs (7miles, 6miles, 6miles) since Sunday, so all is well.

Anywayz! Onwardz and upwardz yeahh???

BAKE – The blorld (blog + world) has gone cookie mad :s seriously! Every post I read, someone has eaten their weight in cookies, is on a sugar high, in a sugar coma, has gone to a cookie party, given birth to a cookie baby…is this some weird American trend?! I’m proud to say I’ve rejected the frenzied trend, and made just one batch of cookies – pumpkin oatmeal:

They might look like ordinary cookies, but BY GOSH, these boys (from the Vegan with a Vengeance cookbook) were OUT OF THIS WORLD. No lie!! I actually made them as a Christmas present for my mum’s work, but we snagged one before they left, and hoooooly cow. I plan on making another batch for whenever we next have Christmas 🙂

Whilst we’re on the subject of things that have been baked/Christmas, I have a quick review for all my lovely Brit readers! The kind folk at Sainsbury’s contacted me with an offer of a selection of their Free From range of Christmas items:

Dairy free, wheat free, gluten free

Sadly, the items were not vegan – BUT, when I told my mum and stepdad about this offer, they jumped at the chance to review! The other night, they broke into the iced Christmas cake slices –

(I seriously need to work out how to change the ISO on my camera….a New Year’s resolution for sure. My only excuse for the dark photo, apart from my inability to use my camera to my advantage, is the crap night lighting)

– and were very impressed 🙂 Words like ‘moist…full of flavour…delicious…soft icing…lots of marzipan…juicy…’ floated about. Even my step dad liked them, which in itself is a HUGE deal – he won’t eat things that are ‘too vegan’ and prefers to live off frozen peas and mac and cheese. But I sure do think I saw a wee smile creep across his lil face when he ate a slice :p HIGHLY recommended.

Right – next up, BLEND!

That would be a pumpkin pie blended cereal mess thing. I forget exactly what went in it now, but I know it involved cereal, soya milk, pumpkin, cinnamon, maple syrup (maybe?), vanilla, and banana. I also know it was one of the most incredible things I have eeeeever eaten. i know I say that a lot, but I mean it this time!

Next up – Item Two:

Ah yes. I was making my usual blended mess – cereal etc etc. Whilst I was digging about for frozen bananas in the freezers, I came across a packet of cranberries, frozen from last year. DING DING DING! I added in a laaaarge handful, accompanied by a tsp of agave (they were fresh, not dried, hence sourness – though I happily eat them fresh anyway :D).

Wowzer! Beeeeeautiful colour, incred taste!! Not sour at all, just…cranberry-y. It was lovely! If I’ve taught you nothing else in this post, take this on board – add. cranberries.

OH! And those grapes, they’re frozen! And holy cow, frozen grapes are da BOMB!

I froze them aggggges ago, forgot about them, remembered (thanks, Jamie Oliver Christmas tv show), and now I’ve bought a whole new pack of grapes which are sitting in the freezer, ready to munch at my leisure. Bliss.

They made an appearance on my chocolate coffee Epic Green Monster this morning too (along with 75p-per-pack cherries!)

Talking of…er…food – yesterday, I did the epic Christmas food shop. I figured I needed super good fuel for it, which led to my eating THE best bowl of oats EVER. A bowl to end all bowls. It was….well, I almost cried at how good it was.

The Bowl of Oats to Trump All Bowls of Oats:

  • 50g oats
  • 2 tsp carob powder
  • 1 tsp maple syrup
  • 1/2 c. soya milk
  • 1/2 c. water
  • roasted and mashed onion squash
  • extra milk on top

Oh. My. It was soooo chocoaltey, so creamy, so comforting, so DELICIOUS! I can’t wait to make it again 🙂

Another thing I want to make again – aubergine sauce! T’other day, I roasted up some aubergine, then blended it with salt, mixed spice, water and nooch, and created this:

Hurrrrraaaahhhh!!! I rejoiced, it was lovely! Silky smooth, with a spicy cheesy flavour. YUMMEH.

Now, I have a slight complaint. I would give the following a big old thumbs up too, but – I just can’t. For part of lunch today, I had a wholemeal English muffin, topped with a squeezy pack of Justin’s chocolate almond butter:

My complaint? To get the thickness I wanted, the squeezy pack was only enough for ONE half of a hardly-large English muffin! Booooo.

Not cool. At least the taste was right up my street (it tasted like a nuttier, thicker version of Nutella, which is odd considering Nutella is made from hazelnuts. But whatevrz.).

2) watch the end of Lucky Number Slevin (Josh Hartnett, if you’re reading – marry me?)

3) Make pancakes

4) read my newspaper

So, sooo rarely do I ever remember to say that on the actual first, so let’s just say I’m excited 🙂 In fact, I’m excited about December in general!

– Christmas. The little kid in me just LOVES everything to do with Christmas! Presents (receiving AND giving <- more so the latter, as I get older, uglier and wiser :p), time off from uni (it’s still so manic), time spent with my beautiful Chika, and with my beautiful boys:

– Hannah’s birthday! Yep, my sister is turning 22years old on Dec 16th…sadly, she won’t be home, as she’s still on her gap year. BUT she does arrive home at stupid o’clock on Christmas Eve morning! I’m secretly quite excited about that…though I know it’ll wear off soon enough :p

– cooking! I cannot WAIT to have more time to cook and be creative and generally have more fun with my food 🙂 I feel like my meals have been somewhat repetitive recently – and very, very babylike*

Happy Thursday guys! ‘m afraid this will probably just be a brief post from me – thee’s some stuff that I’m really really struggling with at the moment, and it kinda feels like it’s taken me over somewhat 😦 But i’ll put on my blog-happy face now 😀

Ooh! Dinner last night was one of my favourites….

Tofu, peanut butter, soy sauce, cinnamon, nutmeg, salt and pepper, nooch – all blended together and mixed with kamut tagliatelle, aubergine and parsnip, and a side of kabocha – all enjoyed whilst watching the World Equestrian Games dressage on Tv :D:

I’ve got into the habit of having kabocha by itself on the side – it’s so squishy and delicate when it’s been roasted, and if it gets mixed with all the other junk on the plate, it gets squashed and disappears 😥 not what we want…anyway, the mild carbo load (does chocolate count as carbs? I had 2 squares later on too :p) was for the purpose of a 9mile run today!

Bah, it was a toughie. I had a Power Bar and 2 tsps wheat germ before I left, but – and I don’t know if it’s cos of my general mood, the hills, or the fact I didn’t have any extra fuel during the run – I totally wasn’t feeling it today. I felt like I was dragging my own corpse along the road!!! Seriously, it was really really hard work 😦 I finished in 1hr22 (I think..I forget now), which was a 9.12 min/mile pace. My slowest in a long while, not counting Sunday’s 18miler. Oh well…maybe tomorrow will be better.

When I got in, I had a scrummy breakfast waiting for me:

Overnight oats!

  • 1/2 c. oats
  • 1/2 c. coconut milk
  • 1/2 c. soya yogurt
  • 1 heaping tbsp Vega chocolate smoothie mix
  • add ins – an extremely ripe banana (literally, so ripe it was mush in the skin!), cocoa powder, and a Veganomicon baked banana muffin:

DEEEElightful! Especially the muffin! I can’t believe I waited 2 days before I tried one of those bad boys – they are some of the best muffins I’ve ever baked! In fact, 2 out of my top 3 muffins I’ve ever baked have been from either Veganomicon, or Vegan with a Vengeance <- both books by the same lady. She’s a genius!

Late morning, I was feeling super inspired to give Chika a good schooling session; Team GB just won 2 silver medals in dressage at the World Equestrian Games, so I was feeling inspired 🙂 Sadly, Chika was not. Actually, that’s harsh, and a lie; she was a very good girl! She just didn’t want to supple to the left very easily…but other than that, she tried her heart out for me, as always, so I was pleased 😀

Lunch came late, but was sooo worth the wait! I saw a post on Never(Home) Maker yesterday, which had a sauce recipe that caught my eye – Cocoa-tomato-beet sauce! It sounds weird, but it was amazingly delicious 🙂 I stuck to the recipe exactly, apart from omitting the parmesan cheese (a) I had none, b) it’s not vegan anyway), and using whole beets, which I blended:

Who would’ve thought – cocoa powder, tomatoes, beets, mixed herbs, cinnamon, agave, salt..it works so well! (This would be a the marriage my title refers to..beets and chocolate = bocolate 😀 I’m a genius right? :p)

I served it mixed with roasted chickpeas, roasted parsnip/broccoli/butternut, with a side of cereal:

Wow wow wow wow. One of the most delicious meals I’ve had in a long long time!! It was actually, properly SUPERB! If you like cocoa flavours, tomatoes, beets, red food, or pink food, or food in general, I recommend you make this sauce. Quick, easy and delicious 😀 Win!

Not a huge amount happened after lunch..I picked a proper big haul of blackberries (711g of blackberries, to be precise :p):

Ups, Downs and Frowns

Ohh my gracious. World’s Most Annoying Day right here. I’ve given myself a headache, and a serious need for a bout of Botox, to smooth out the wrinkles I’ve given myself from frowning so hard today!

I woke up feeling pretty cranky, but like..body-cranky, not mood-cranky – it was weird. After quickly checking my emails and eating an apple and 2 tsps wheat germ, I had a pretty good DVD workout for 50mins 🙂 An Up!

Then came the Down 😦 I walked back into the kitchen, and my laptop had died. Nowt unusual, it dies thrice daily now (like, it’s on, then the screen just goes blank and that’s that. Normally I just press the on button, and it restarts) – except this time, it wouldn’t turn back on! Like, not at all!! I tried it with a different battery lead thing, and it was having none of it :O Needless to say, there were some tears (yeah, I cry easily :p) – my photos, gone. My iTunes, gone. My documents and essays and lab reports, gone. My DVD [in the disc drive], stuck. It was aaaawful 😦

In my sad daze, my appetite vanished, so breakfast came later than usual –

  • cooked squash (an odd sort. I thought it would be delicious, but when I opened it the other day, it was certainly not! Nice, but not kabocha-nice – so I’ve decided to use it for other purposes :D)
  • 1 c. cereal
  • 1/2 c. soya yogurt
  • 1/2 c. coconut milk
  • hemp seeds
  • xanthan gum
  • maple syrup

It was OK…but just ok. I was feeling too sad to enjoy it! Or even to put half decent toppings on!! Plus, as I said, the squash just was not good enough. My taste buds are spoilt with all the kabocha floating about 😛

After breakfast, I took my laptop and drove 40mins to PC World. Down – Nasty Mr Australian Sat Nav directed me to totally the wrong place, so I had to park in a lay-by and walk! Grrrrrrrr.

Anyway, I went to the tech guy, and he tested it and as it turns out, my approx. 6month old battery thing (which I bought not long ago to replace the last one, which I’d had a year) had totally died. ARGH! I ordered a Mac a few weeks back, which was due to arrive on Thursday – but I still had to fork out SIXTY POUNDS (!!) on a new battery, cos I needed all my photos and files! Talk about furious.

Cos of my late breakfast, lunch was late and a bit blah too. I had made a big old smoothie, using a beautiful melon….

After lunch, I felt incredibly wound up, like I wanted to explode any second, so I did the wise thing, and took myself off alone on a walk – perfect for catching up with celeb gossip (hello, Heat magazine :p) and soaking up the vitamin D rays 🙂 Oh, and eating blackberries 😛 Sometimes, being alone is the best thing.

Randomly while I was out, some bloke pulled over asking if I wanted a lift. That’s like, the 6th bloke that has asked when I’ve been for walks this summer! When did it suddenly become perfectly normal for men in big cars to ask lone girls if they needed lifts!? Mad!

I felt a little low on protein and that had a 9g kick of it 🙂 However, the protein has not given me the knowledge to work out how to connect to the internet…where is a freaking Ethernet cable when you need one!!??? Oh my! I seriously wish I was a nerdy boy sometimes. Bah.

Boy did I have a messed up sleep last night!

  • Cat jumped on me, woke up.
  • Bathroom break, got up.

  • Couldn’t breathe due to virus/cold, woke up.

  • Had a dream I had a ma-hoosive argument with my mum, woke up crying (!!)

Twas an interesting night, albeit not a peaceful one :/ I’m amazed I had the energy to do anything today to be honest! Especially since I woke up feeling somewhat crummy, due to the virus my mum gave me. In a way, it’s a good thing though – cos it means I had it on Sunday, which may explain my struggles at the end of the 16miler!! Hurrah 😀

Anyway.

Dinner last night was not particularly imaginative. In fact, it was a repeat of Saturday’s dinner:

I was hit by a major chocolate craving in the evening though, which only one thing could solve –

Oh yes, LINDT 85%!! I can’t believe how long it’s been since I had some…it was SO good. The chocolate to end all chocolate cravings..yeh, it hit that spot 100%. I went to bed happy 😀

Tuuuesday, I hate Tuesdays.

I had an apple pre DVD workout (just under an hour), and then had a breakfast date with myself 🙂 In the mix:

  • 1 c. cereal
  • 1/2 tsp xanthan gum
  • 1/2 c. milk
  • 1/2 c. yogurt
  • strawberries
  • 1 tbsp hemp seed
  • 1 frozen banana
  • aunt grown swiss chard

The morning was spent picking some blackberries (I had a competition with myself to see who could fit the most blackberries in my mouth. Shockingly, I won :p), riding, sneezing and tidying. Quite the wild one right!? That’s how I roll 😀

Lunch was good though – I was feeling INSPIRED!!!! So much so, I created a recipe 😀

Sweet Potato….ok, I’m stuck – are they fritters? Cakes? Or barjis (sp?)? Help! Anyway –

  • 1 grated sweet potato (about 150g ish)
  • salt and pepper, to taste
  • 1/2 tsp or so onion powder
  • 1 tsp apple cider vinegar
  • 1 tsp flour (I used wholemeal spelt flour)
  • a splash of soy sauce
  • 1/2 an apple (a small one), grated

Mix:

Fry over a lowish heat for…like….15mins? 20? You’ll know 🙂

The mix is pretty delicate at first, but the longer it cooks, the better it holds together 😀 So when it’s super easy to flip, you’ll know you’re almost there!!

  • 1/2 c. red kidney beans

  • apple cider vinegar
  • Worcestershire sauce
  • molasses
  • smoked garlic

The sweet potato stuff was so wonderfully good! I LOVED it! The texture and the taste was fah-bulous! I’m proud of myself 😀 (though I don’t want to toot my own trumpet here). I recommend you make it, rather strongly. Really.

I had a great day today! Why? I treated myself and went SHOPPINNNGGG!! And with good reason too – as you all know, I’m off to the Healthy Living Summit a week on Thursday, and after doing my Chicago weather research (aka watching back to back ER episodes), I’ve come to the conclusion that the city is HAWT in the summer time. Being English, I’m in general pretty poorly prepared for hot hot hot weather. I’m also the (not so) proud owner of some very white legs. SO, I thought I should bite the bullet and buy a maxi dress! My glowing limbs will be covered, but I’ll be very cool (in every sense of the word :p).

I had a mission!

I also wanted to buy some new running gear, for three reasons.

1) I have none. I run in a skanky bright yellow cotton tank top, and some rather unflattering boy shorts, bought when I was 15 for PE at school….

2) I have a 14mile run on the cards on the Sunday of the HLS (which I’m running with some fellow bloggers), so I didn’t want to look like a hot sweaty div :p

3) I reached one of my own personal goal weights, and my mum said when I did, she’d treat me to an item of running clothing 😀

So that was that 🙂

When I got home, I tried them all on again and felt SO awesome!! Very pro! So pro in fact, I took Poppy for a half hour walk in a storm 😛 Just cos I felt super! Don’t you love it when clothes just make you feel good? That’s how they should make you feel, in my opinion.

ANyways, yes, where was I…oh yes, I also bought 1kg of wheatgerm and a maxi dress!! It’s BEAUTIFUL! Though weirdly, I didn’t take a picture of it :/ you’ll just have to see it when I’m in Chicago!!

Right, enough about shopping. Food and exercise?

I woke up, had an apple, a sq of chocolate and 2 tsps wheatgerm (straight off the spoon, before you all ask :p), and then did precisely 54minutes of DVD action 😀

I blended it a little longer today so it was reaaaaally smooth, and my GOSH! It made all the difference 😀

I packed up a lunch to take into town with me (you can’t trust Suffolk to provide vegan cuisine….fatty McDonalds cuisine maybe, but not vegan). I had some roast garam masala coated broccoli:

For dinner, I had what I was gonna do yesterday or the day before, or some random time this week….tofu-peanut butter kamut spaghetti, with aubergine, grey pumpkin and parsnip:

The tofu was blended with soy sauce, peanut butter, and cinnamon to make a sauce – tres creamy!

I did my 11miler early today, the one I was so worried about 🙂 I won’t say I kicked some crazy butt at it, or that I rocked it like…a rocker…but I did it and I’m proud of myself 🙂

Total running time – 1hr 36 (and 16mins ish for the 12th walking mile). So it by far wasn’t the fastest run (I did my two half marathons – two miles more! – in 1hr43 and 1hr50), but for me, today, it was super. I was so proud of myself! I actually want to touch on this at the end of the post; ie how do you judge success at a performance? But as I say, it’ll go at the end so you don’t have to trawl through it if you don’t want to :p

Perfect fuel methinks 🙂 After 6miles of my run (my 1st loop)I broke into my Lucozade Sport. In an ideal world I’d like to just stick to water running, and avoid too much processed stuff. But I didn’t want to open my –one- carton of coconut water yet, so Lucozade it was. Though, in my stupid sweaty state, I tipped out ALL the water from my camelbak and replaced it with the Lucozade…doh! In the last 2miles, I had to keep reminding myself not to drink too much or I’d run out :p opps!!

Anyways, at mile 7, I stopped to eat some Nakd lemon raisins, and then continued on my way. Twas a pretty uneventful run really..in the last 5 or so miles, I gave myself a 30second walk in each mile, but other than that, all was well; no feeling like I was gonna die!!

So as I say, I was super proud of myself, and so decided I would treat myself to all my favourite foods today – starting with…..

Dark Chocolate Dreams peanut butter, yogurt, cereal, milk, banana, spinach…topped with granola dust, dates, homemade jam and raspberries 🙂 Good GOSH, it was amazing to have a real GREEN EGM again! I had missed them so 😥

After breakfast, I treated myself to an episode of Gossip Girl – certainly a treat, as I truly can’t remember the last time I watched TV in the day! Crazy. After GG, I took Poppy out for a while, randomly felt sick for a 1/2hour, watched another episode of GG, pampered Chika for a bit, and then it was time to force some lunch on myself. I really, reaaaaally wasn’t hungry, but we all know how important re-fuelling is!! Plus, when said fuel was gonna involve one of my favourite things in the world, I just couldn’t say no…..

Really, REALLY good! They were like better tasting and far healthier crisps. Delicious! If you ever see them, BUY THEM! They come in a banana/blueberry flavour too (which I have :p), so something for everyone 😀

Ok, so I was thinking about my run today. For me, it wasn’t fast, and I walked for a few mins during it. 3 months ago, I would have been SO disappointed in myself. But I’m starting to realise – my performance should be judged based on how I am at that time, today, not previously. Like, my super fast runs were in winter, when it was cooler – heat has a MAJOR effect on me and has meant my speed has suffered.

The other thing I realised was that I shouldn’t compare myself to other people. I do this in every aspect of my life – school work, social life, riding ability – everything. But today I think it’s quite applicable to my running.

Not all that long ago, I read a blog post by a girl who’d run her 4th or 5th marathon. Her basic reaction to her (approx.) 4hr30 time was ‘LOL at me, how slow was I!? EMBARESSING!’. When I first read it, I felt so sad!!! My goal time for the Marine Corps marathon is 4hr 30 – yet to her, a time that slow was laughable! But today, I started to realise – who cares about her? To HER, that was slow. But to me, that’s good! I should NOT feel disappointed in myself if I run slower than someone else, or if I find 11miles tough, whilst fellow bloggers pump out 7 or 8miles every day, with the odd 20miler thrown in for fun. That’s them! I’m me! It’s all relative to who you are. So I suppose my point is, although some comparison is good sometimes, in general we shouldn’t compare ourselves to other people, when we just want to have fun. I think realising this was part of the reason why I felt so proud of myself for my own 11miles today. Last night, I was SO scared. But I did it – and that’s all that matters! It wasn’t fast like how I used to be, but who cares. I’m doing this for me and no-one else.
