Boy did I have a messed up sleep last night!
- Cat jumped on me, woke up.
- Bathroom break, got up.
- Cat jumped on me, woke up.
- Couldn’t breathe due to virus/cold, woke up.
- Cat jumped on me, woke up.
- Had a dream I had a ma-hoosive argument with my mum, woke up crying (!!)
- Cat jumped on me, woke up.
Twas an interesting night, albeit not a peaceful one I’m amazed I had the energy to do anything today to be honest! Especially since I woke up feeling somewhat crummy, due to the virus my mum gave me. In a way, it’s a good thing though – cos it means I had it on Sunday, which may explain my struggles at the end of the 16miler!! Hurrah 😀
Anyway.
Dinner last night was not particularly imaginative. In fact, it was a repeat of Saturday’s dinner:
Kamut tagliatelle with a peanut butter/soy sauce/tofu sauce, with aubergine, parsnip and kabocha – Simple, but delicious!
I was hit by a major chocolate craving in the evening though, which only one thing could solve –
Oh yes, LINDT 85%!! I can’t believe how long it’s been since I had some…it was SO good. The chocolate to end all chocolate cravings..yeh, it hit that spot 100%. I went to bed happy 😀

Tuuuesday, I hate Tuesdays.
I had an apple pre DVD workout (just under an hour), and then had a breakfast date with myself 🙂 In the mix:
- 1 c. cereal
- 1/2 tsp xanthan gum
- 1/2 c. milk
- 1/2 c. yogurt
- strawberries
- 1 tbsp hemp seed
- 1 frozen banana
- aunt grown swiss chard
Topped with dates, Grape Nuts and homemade plum jam, with a side of blackberries:

The morning was spent picking some blackberries (I had a competition with myself to see who could fit the most blackberries in my mouth. Shockingly, I won :p), riding, sneezing and tidying. Quite the wild one right!? That’s how I roll 😀
Lunch was good though – I was feeling INSPIRED!!!! So much so, I created a recipe 😀
Sweet Potato….ok, I’m stuck – are they fritters? Cakes? Or barjis (sp?)? Help! Anyway –
- 1 grated sweet potato (about 150g ish)
- salt and pepper, to taste
- 1/2 tsp or so onion powder
- 1 tsp apple cider vinegar
- 1 tsp flour (I used wholemeal spelt flour)
- a splash of soy sauce
- 1/2 an apple (a small one), grated
Mix:
Shape into pattie type things:
Fry over a lowish heat for…like….15mins? 20? You’ll know 🙂
The mix is pretty delicate at first, but the longer it cooks, the better it holds together 😀 So when it’s super easy to flip, you’ll know you’re almost there!!

Barbeque Style Beans
- 1/2 c. red kidney beans
- tomato puree
- apple cider vinegar
- Worcestershire sauce
- molasses
- smoked garlic
All mixed up:
Then microwaved to warm through. BUT! We’re not there yet 😛
I also roasted the other half of the apple with cinnamon, agave and parsnip, and served everything together with grilled aubergine and a fresh fig (phew):

The sweet potato stuff was so wonderfully good! I LOVED it! The texture and the taste was fah-bulous! I’m proud of myself 😀 (though I don’t want to toot my own trumpet here). I recommend you make it, rather strongly. Really.
After all that excitement, the rest of the afternoon kinda disappeared into oblivion, but it did consist of a square of Lindt:

Question: Did anyone watch Jamie’s Food Revolution last night? It was the one that was on in the US ages ago, but has only just been shown here. What did you think? i loved it, but ohmygosh kids are fed *CRAP* in schools!!! I don’t know the outcome, but I really hope he succeeds – I ❤ Jamie 🙂

sorry you had a lousy sleep last night and are fighting a nasty virus 😦 but – i’m glad you now know WHY you had that issue on your run!! maybe it’s not a fun reason, but at least there is one. and boy – your cats really love you! haha. luckily if one of mine want to sleep with me they’re pretty discrete about it.

oh – and food revolution is awesome isn’t it?! i’m not sure if there’s a new episode coming that you’re seeing, or if it’s an old one…but it’s so frustrating to watch at first because the schools and parents are difficult to work with until they start learning, too.

My husband and I watched Food Revolution (in horror) when it aired here in the states. It’s worth the watch and I’m SO glad he did this show. I won’t say any more so I don’t spoil anything for you – let me know when you get to the end! I’d love to know your thoughts.

I tend to read your blog everyday at work which leads me to salivate over meals I would like to try, get ticked I have 4 more hours of work, discover I have to google words like aubergine and kabocha and celeriac (not words I see in the States much), and debate whether being vegen would actually be that bad………………..I have my sweet potatoes, dates, pure maple syrup ready for the weekend to try one of your dishes. It will be my reward for hopefully a solid Saturday morning long run. Keep cooking girl.

The sweet potatoes remind me of latkes. As much as I want to try the sweet potato thingers, I am absolutely dying to try your ‘baked’ beans! I love them so much but they are usually SO sweet.

Jamie’s Food Revo is very eye opening! It made me sick to see some of the things they serve children, and to think that I used to eat it all as well! I’m glad to be done with school for that.

I thought the Jamie show was so good lady night, and yea- the USA food guidelines fir kids are a load of crap aren’t they?! Sweet potatoes are do good and versatile, luv em. My cats always nagging me during the night too! Xx

I think you should call them sweet potato pancakes because they are kind of like these http://en.wikipedia.org/wiki/Potato_pancake but look way more tasty.
My cat doesn’t jump on me but sometimes she walks across the pillows gets really close to my face and meows really loudly, I am not sure which is worst but both are quite annoying when you are trying to sleep.

Hi Freya–I’m a first-time commenter..I love your blog, and felt compelled to note that Worcestershire sauce is not usually vegan, as it has anchovies in it. Perhaps this isn’t news to you, but someone pointed this out to me once and I couldn’t believe it at the time! The recipe still sounds amazing though 🙂

I LOVE Jamie Oliver. I admire him so so much, he is just so unbelievably passionate about his cause. Food Revolution was eye-opening, repulsive, but so significant. Look up his TED Talk if you wanna be really inspired 🙂

Love Jamie too (especially his accent)! Food Revolution was a really good series, I hope the people in the town he visited are still keeping up with some of his teachings. I was surprised though at how difficult it was for the people to be willing to change some of their habits. Even though the facts were clear (at least to me), they were still clinging to their unhealthy habits. Frustrating!!
I used to buy the 70% Lindt chocolate but since I’ve tried the 85% I am hooked, it’s so good and rich!

Soooo your lunch is pretty much like my perfect meal. The sweet potato cakes? sound SO GOOD and guess who may be making those sooner rather than later… and barbecue beans? I’m ALL about that! And a fresh fig?! Yes mam!!! Quite possibly my FAVORITE fruit but so hard to get my hands on around here!

Ughhh I hate bad nights’ sleep!! My cats used to wake me up all the time, so I finally “kicked them out” of my room. I close my door at night because I just want to sleep peacefully!!
Just got caught up on your last post- I love doctoring up a can of soup for a quick and easy vegan meal! I start with a vegan canned soup, then add lots of veggies/beans/salsa etc. Really good!

The fritters look pretty awesome. I am thinking you should come run the Detroit Marathon in a month w/ me and you can cook all sorts of awesome stuff and you can check out the grad psych programs at the U of Michigan 😉 2 marathons in a little under a month might be a bit much though… Oh well, you’ll rock yours!
