My GOSH. How much has it rained today?? RAIN RAIN RAIN!! I have officially been soaked to the skin twice today- once riding, once walking Poppy. Annoyingly, in between both of those activites, the sun came out to play. Hurrumph. The way of the world right??
I had the bestest (yes it’s a word) pre-run snack today!
A FUJI APPLE!!! Oh, it’s been too long, my beauty, too long. Along with the apple, I had 2 tsps wheatgerm, a date, and a square of that – Whole Foods bought – raw chocolate, with maca, vanilla pods, and wild bue-green algae. It was goooood!
Run-wise I was due 6miles today. I ended up doing 10k (6.2miles) in 55minutes. The slowest I’ve EVER done that distance..but I didn’t walk and I didn’t feel like I was going to die, so going slower must have been something positive 🙂 I walked 0.8 of a mile after I was done to cool off and stretch out, and then came in to the BEST breakfast!!
As I’m STILL out of spinach, my EGMs are somewhat lacking in the green 😦 but they’re still super! In today’s mix:
1/2 c. yogurt
1/2 c. milk
1 biiiig frozen banana
1/2 tsp xanthan gum
1 biiig spoon of peanut butter
Blended in Vincent, and then topped with jam, granola, grated cacao and dates:
It was super creamy and super delicious!! I really didn’t want that bowl to end 😦
When it did, I shot out to the health food store to get more yogurt (I’m almost out), as they always stock it – wasted trip as it turns out; the ONE time they don’t have it…arhghg!!
When I got back, I rode my Chika shaped baby. We did 10mins warm up in the school, and then I thought I’d take her for a fast canter/gallop for a while; I was feeling a bit down and didn’t feel like schooling 😦 But – sod’s law – like the second we set foot on the road, it started hammering it down with rain!! Like, proper torrential rain! Gah. Chika didn’t care though – she had her ears jammed forwards as we galloped down the trails 🙂 It was fun!
Lunch today was very random, but absolutely delicious 😀 I made Angela’s spelt pancakes as a base….but I think I must have used a small 1/2 cup of flour without realising, cos they came out much thinner today. So much so, that instead of forming neat little pancake blobs in the pan, this happened:
I tried to be neat and flip it as one…
But in the end, I had to accept the neatness weren’t gonna happen today!
Anyway, along side them, I roasted a whole, seasoned red onion which, during cooking, exploded its’ insides out!?
Weird right!? I also roasted some parsnip, celeriac, grey pumpkin and yellow tomato. I ALSO had some edamame beans (sp? I can never spell that word!), and an aubergine/pear mash…yes it sounds weird. But it was lovely! Last night I was reading Veganomicon, and it said something about roasting a whole aubergine so the insides go gooey. Soooo I roasted 1/2 an aubergine…
Then mashed an extremely ripe pear with salt and cinnamon, and mashed in the aubergine mush (minus the skin):
I know it looks horrible..but believe me, it was YUM! All together, it was a FAB meal:

In the afternoon, I took Poppy out for a walk – it started sunny and warm, but after 25mins, the dark clouds caught up with me and I. Got. Soaked. I mean, so drenched I had puddles in my shoes….it was gross! I have NEVER been so wet! Frickin’ torrential rain….bah.
Snackwise, I broke into another Whole Foods purchase – a raw Buziball 😀
Cocoa mass, apricots, ground & chopped almonds, raisins, goji berries, maca, kelp, cacao nibs, bee pollen (literally, as I typed this – I realised it wasn’t vegan! I completely missed the bee pollen when I bought it/ate it :s oops!), agave syrup, vanilla.
It was super super delicious – dense, full of flavour, delicious…loved it 😀
For dinner, I marinated some tofu earlier in maple syrup, mixed spice, soy sauce and teriyaki sauce. Alongside, I roasted sweet potato, grey pumpkin, parsnip and leek, and then fried everything together, along with more soy sauce, peanut butter and kale. The result:
Oh. My. Days.
That meal was FABULOUS! So fabulous in fact, that I’m going to cook the exact same thing very soon, and give it a proper recipe page, cos it just worked. Beautiful flavours and textures….*le sigh.
Dessert is going to be a banana/raspberry/carob powder/maple syrup/silken tofu pudding – it will be INCREDIBLE 😀
Question: What’s your favourite food? Mine would have to be kabocha squash, parsnip, and cashew butter 🙂
What’s your favourite smell? I like fresh rain (or the smell that comes with it), vanilla and coconut 😀
