Yes guys! At long last, my delivery of vital wheat gluten came!!
Look, see!! There it is! Oh the joy. You probably won’t be surprised to hear then, that I spent some time today making seitan 😀 I found a method online, so I used that but changed the flavouring a little; ie, I boiled it up with cinnamon instead of ginger…uh, and that’s about it 🙂 Anyway – the finished product:
Hehe! It looks so weird! I tried a little chunk, and it’s so MEATY tasting! Like the texture is quite…tough? But in a good way…hmm. Has anyone else had seitan before?

Straight after breakfast, I worked Chika (which in hindsight probably wasn’t the wisest idea – bouncing about on a horse with a very full stomach? Yeah :/). I gave her a quick warm up in the dressage saddle, and then switched to her general purpose so I could do some jumping 😀 Bless us, we haven’t jumped since last summer some time 😛 but she’s so super, you can not jump for months and months, and then randomly do it one day and she’s still super. I did the warm up jumps, then Hannah had a little jump-play on her. Of course, Chika was super 😀 (The only downside was that my spur rested RIGHT on my nasty blister I got on Sunday. It popped. It hurt. I was sad. :()
After Chika, I helped Hannah jump Tig, then I made my seitan, then I made curry hummus (subbing a fruit sweetener for the honey, and toning down the spice a bit, so my mum could eat it):
That is some kickass hummus right there!!
THEN I made a FABULOUS lunch! The slightly boring part:
Roast brussell sprouts, parsnip and red pepper, with onion powder. Very good – I swear the parsnip literally MELTED in my mouth 🙂
The better part of lunch was immense!! I used Jess’ waffle recipe again (I can’t find the exact recipe cos it was a few weeks ago, but I’d written it down), but – as usual – I don’t have a waffle maker, so they were pancakes instead. I had to change it slightly – just mashed banana subbed for the apple sauce. The super incredible bit came from my own creation – chocolate cherry sauce!
- 6 or so cherries (minus the stones!!), chopped up
- approx. 3 tbsp ish of coconut milk
- 1 tsp agave
- 1/2 tbsp ish cocoa powder (maybe more? I can’t remember :p)
Mix it up, and let it simmer over a low heat, with lots of stirring, for like..10mins or something? Til it gets thicker and the cherries break down somewhat:
Then, serve it over the pancakes!
Oh. My. Gosh.
There are no words!! Incredible!
Dessert – some So Crispy bites – paled in comparison 😛
After lunch, I took Poppy out for an hour, and got ‘chased’ by the World’s Ugliest Dog, which was apparently called ‘PPPEEEENNNNNNNNNNNYYYYYYYYYY’…or something. My gosh it was ugly! It was like an immensely hairy, skinny, grey/black ratty thing. Truly disgusting!
When I got back, I sorted Chika out and did a bit of tidying and then made yet another fabby food dish IMHO 😀
Blended:
- a pear
- nutmeg
- 1 tsp maple syrup
- 1/2 tsp xanthan gum
Then served with 1/2 cup cereal:
Totally better than yogurt 😛 Also totally delicious!! What would I do without blenders…I shudder to think….
For dinner, I had to combine seitan and coconut milk. Someone in the comments yesterday (Danielle? I think…) suggested adding the milk to a stir fry cos it thickens and goes very nice, so that’s what I did 😀
I baked parsnip and squash, and stir fried leek and the seitan, garlic and cinnamon, and then added in coconut milk, cooked buckwheat noodles and the veggies, and voila:

It’s been too long since a good old [delicious] stir fry 😀
I gotta go tidy now (and eat dessert laterz :p)…another 3 days+ of painters to get ready for. HOORAY. Can you sense the sarcasm?? Gah.

For dinner tonight I had curry (same as in my post last night), tumeric rice and a naan.

I don’t know what I’m having for dinner tonight! I was thinking maybe a salad with a sweet potato topped with black beans, but the beans have been in my fridge for a while now so I’m afraid of what I’ll find when I open the tupperware 😯

i’ve never made seitan before, and, actually, i’ve only eaten the stuff a few times. i’m too intimidated to try to make it and i can’t find it in any of the grocers around here. maybe i’m just not looking hard enough!

Never heard of seitan – you are getting more weird, wonderful and adventurous every day. Love it! Who says vegan is boring 😉 !
I had stir fry, too. Kept it pretty simple as my Mum is still feeling dodgy after food poisoning, so just had some crunchy veggies, edamame and almonds with a bit of lemon juice and soy sauce. Of course, I had to add chilli flakes to mine. Obsessed! I also had wholewheat noodles, far superior to normal ones IMHO. Cherry chocolate sauce – amazing! Jx
I’ve never heard of seitan at all. You are so brave trying out new foods. I love reading your blog as it inspired me to seek out new foods and food combos! I will have to do some research on what seitan is after this!
For dinner we had Chicken Stilton – chicken, leeks, bacon, red pepper in a sauce made form creme fraiche and melted stilton – yum! Not the healthiest of meals but delicious none the less!
Aah I get inspo from those crazy american blogs – I’ve seen seitan on quite a few over there! It’s really tasty 🙂

My dinner tonight was simple and hot weather frinedly, just lots of salad veggies, falafel and cashews, it was far too hot for anything else, my appetite just vanishes in the heat 😦
Yet another stir-fry going on here ~ mine had chickpeas, sugar snaps, carrot, baby corn and pak choi in a sweet and sour sauce (just apple juice, balsamic vinegar, gf soy sauce and a little tomato paste, with cornflour to thicken) with brown basmati rice.
I have tried seitan a while ago and loved it ~ brilliant source of vegan protein. But sadly it’s obviously made from wheat so I can’t go near it now 😦

You have to spend a min of £10 to get anything, but the site sells loads of store cupboard essentials cheaply (I got a heck of a lot of sea salt, cinnamon, onion powder, smoked paprika, mango powder and xanthan gum – all stuff I need!). Do get some, it’s super easy to turn into seitan AND it tastes so good!
That pancake topping looks incredible! And so does your curry hummus! I have not made seitan yet because I don’t have all the ingredients but I have heard nothing but good things about it. Hope your week is off to a great start love!
Oh man I’ve been wanting to make my own seitan but intimidated to do so– now seeing yours, maybe I can summon up the courage! Haha. Loooove the sound of that hummus! I’m due to make more anyways, so I’m definitely going to go for that type of flavor. Thanks for the inspiration!

Thanks for commenting 🙂 Yeah the recipe is in the recipe pages (or it should be..maybe it isn’t :s) – but it’s 1 cup cereal, 1/2 cup milk, 1/2 cup yogurt, 1 tbsp cocoa flavour ground flaxseed (or just cocoa powder), 1 very big frozen banana, lots of spinach – however much you can handle! – and 1/2 tsp xanthan gum, added near the end. It works fine without it, but I like the addition of it 🙂

I didn’t realize that Seitan is something that can be made quite easily; I’d read about it before and have fancied trying it for a while but wasn’t sure where to get it- I kinda though it was something pre-made…silly me… why not just google it…
The waffle-pancakes and cherry sauce look soooo delicious! Drool… Will have to try both asap :o) What ingredients did you use for the pancakes? I went over to Jess’s blog but I am not sure which recipe you used (love her blog and spent the best part of 2 hours reading through her posts…oops)
Yeh, it’s so easy to make!
For the pancakes, I used 1/4 cup oats (which I then ground up to make oat flour), 2tbsp wheatbran, 1 tbsp protein powder, vanilla essence, 1 tbsp wholemeal flour, a spoon of wheatgerm, 1/4 cup milk, 1 flax egg, 1.5tbsp yogurt, 1 tbsp apple sauce (or mashed banana). Very simple 🙂 It was from a random post a while back, but isn’t an ‘official’ recipe I don’t think 🙂
