Hello guys! Sorry for being absentee over the weekend (blame the eventing), but I quite like having Saturday as a ‘disappear into a black non-blogging hole’ day 😛 Here be the recap anyway 🙂
Saturday
I was a busy woman today, oh yes! Or should that be a busy groom..or a busy photographer…I’m not sure which! You seeee, I was Hannah’s groom today at a one day event (dressage, showjumping and cross country), as my mum – who normally acts as groom – was giving the course, so it was just Hannah and I. Oh, and Tig 😛 We had to leave the house with the horse at 7.30, so I was up pretty early. I had 2 tsp wheatgerm before we left, and then I ate a GLORIOUS overnight oats/banana soft serve combo:
- 1/2 cup oats
- 1/2 cup milk
- 1/2 cup yogurt
- cocoa powder
- 1tbsp chia seeds
- layers of banana soft serve
I was so prepped I even layered it the night before 😀
Sitting patiently in the fridge for me 🙂

This morning, I topped it with cherries and raspberries:
Hoollyyyy deliciousness! An amazing bowl if I do say so myself!
Morning snacks included a big Fuji apple (note the rain on the windscreen – we got soaked today):
And some shared strawberries (polos for the horse, diet coke for the caffeine :p):
And some weird soya chunks:
They tasted like dog food, and were SO chewy..not impressed. Anyone else had them?
The actual morning consisted of this:
Dressage…
Showjumping…
ME!
And cross country!
Hannah did really well – if you’re not horsey, you probs won’t understand (sorry :(), but she got 33 penalties in the dressage, 2 down in the showjumping and clear cross country. She was thrilled!! Which meant so was I, cos if Hannah’s happy, I won’t get shouted at 😛

We then came home, where I made a super quick lunch – some kind of weird split pea stew, with a pitta bread:
The stew thing was just yellow split peas, celeriac, turnip, carrot and spices, all boiled up together and then blended.
It looks kinda nice, but it was actually pretty bland 😦 I should have seasoned it more – hurrumph. I followed it with a pear, then Hannah and I drove back [with the addition of Poppy] to the event to get her dressage sheet and walk the cross country course, just for laughs. It was actually quite a good workout, walking the course as it was full of hills – But BAH BAH, I got a GIANT blister on my heel 😦 not impressed 😦 😦 I limped round the second half 😥
Then, we came home, mucked out, I had a cereal/yogurt mess:
I soo needed comfort food – Despite having a day off from exercise, I am SO tired today! I just wanted to fall asleep in the car :p so my head was screaming out for CARBS CARBS CARBS!!
Dinner was very repetitive again..I was too tired to think of anything else 😛 Soy sauce-marinated and roasted tofufu, with cocoa durum wheat (I rediscovered the durum wheat in my cupboard the other day, hence why it’s having it’s..4th!?…appearance in about 5days! The heart wants what the heart wants :D), onion squash, parsnip and turnip:
Yum.
Whilst eating sweet potato muffin and some yogurt for dessert, we watched the film Paranormal Activity – LOVE it! Scarier in the cinema, but still good 2nd time round 🙂

Sunday
Apple, wheatgerm, chocolate, peanut butter, run.
Run = 10k/6.2miles, 52minutes. Very good!! Enjoyable, fresh legs, fresh mind 🙂
Breakfast = EGM:
Amazing. Every time, it gets better!
Morning = schooled Chika (she had a touch of horsey hayfever and was not very happy :(), baked for Hannah (a requested Victoria sponge, as celebration for her event yesterday), gave Poppy the leftover whipped cream:
Tidied house for painters, LOLd at baby pictures whilst tidying, had a wonderful lunch:
No, that’s not oats in a jar….
It’s sweet potato in a jar!
Leek, celeriac, broccoli, pepper, Hoi Sin sauce, Japanese spice blend.
Fruit of champions!
Dessert = cornbread muffin.
Afternoon = a pear, mucking out, walking Poppy and Hannah in the forest, more tidying, and the return of BEAR GRANOLA!
Amaze.
Dinner (adapted from here) = red and green lentils, water, curry powder, ginger, raisins, salt, tomato puree, coconut milk, garlic, onion squash, parsnip, carrot, 1/2 tbsp chia seeds:
Oh yes! [I chose to cook some kind of stew thing purely so I could use my NEW BOWL!!]
Dessert – muffin, yogurt, GOSSIP GIRL!!

What other ways can you use coconut milk, besides in a curry? The coconut milk I used for my dinner here isn’t like Kara coconut milk – which you put on cereal, in tea etc – it’s like proper coconut milk….what’s your favourite use?
What a busy weekend! I’m glad your sister did so well at her one day event, she does look happy! You look fab in your sunglasses too! I think you can put coconut milk in baked good as a substitute for other liquid ingredients. Maybe there are some recipes online that will have some suggestions!

As for the coconut milk, you could use it in baking maybe or porridge or an EGM?
This weekend I spent my time mostly reading, nothing much.
The banana soft serve didn’t melt in the fridge overnight?? Horse jumpin’ seems so scarrrrrry! I’m allergic to horses though so I’ll never know for real (yes, I know…I’m allergic to the world).
No..it was delicious! It wasn’t at all watery 😀

I love coconut milk. You can use it in oatmeal, smoothies, grain pilafs, stir-frys (where it reduces down to a creamy glaze)… 😀

Hannah is a gorgeous rider, and Tig a beautiful horse! They really do make a beautiful pair, and I’ve also gotta say, you’ve got really good timing! I think it helps to be horsey – you know when the horse looks their best (at what point in the stride). I always get so bummed when I see pro. pics from an event I’ve gone to and the timing is all wrong 😦
And props to you guys for sticking it out in the rain. Is there anything worse than getting poured on all day?!

Yeah the stride thing is annoying!! I find jumping easy, but in trot/canter, I know where it should be but it’s SO hard!! Gah :s

Oh my goodness I went crazy over the eventing photos! You and your horse make a GORGEOUS pair! I neverr looked that good in the dressage but I loved showjumping because my horse was a speed demon. And crosscountry is always fun but the fact that the jumps don’t move is a bit scary.. oh and the fact that my horse hated water!! Congrats on doing so well in the event!

What a fun weekend! I started to learn to drive, did some shopping, and spent lots of time with my daddy.
what a gorgeous horse! those photos make me miss my jumping days oh so much.
your eats look phenomenal, as per usual.
i love to use coconut milk to cook rice in! it makes it sooo much more flavorful! i also bake with it when i need to use nut or soy milks and i’ll put it in soups to make them creamier.
iv just put up a recipe for a satay sauce using coconut milk! check it out, its so easy and delicious! xx

I took the dog to the vet and had an eye exam appointment.
Sunday we celebrated with my family for Father’s Day.
Went to the gym on Saturday, cleaned up around the house.
Nothing too exciting. But it was nice to see my family as always!

I miss horseback riding so much! I rode until 10th grade, and loved it, but then got so busy and the farm was so far away that I had to stop. Hopefully I can pick it back up one of these days! (Although I never did it as professionally as you do!) Also, overnight oats in the morning topped with fruit is the best!
