Oops – I totally forgot to even mention the word Humpday yesterday, let alone the fabulous new tradition of Horsey Humpday (Thank you Jessica @ Healthy Exposures :D) – so I’m having it today instead 😀 Horsey pictures to come….
First off, Da Day!
I came downstairs this morning to a dead baby rabbit – it was intact, except (excuse the grossness of this…) it’s heart was missing. Yes, some lovely cat (Obama I think) ate just that part. Isn’t that lovely?? Exactly what you want to
step on side step in the morning.
Oh well. Cats will be cats!
I decided on two short runs today – one in the AM, one in the PM, so before I left for my first run, I had an apple, 2 tsp wheatgerm and a square of dark chocolate (you know most dark chocolate brands are vegan? I didn’t realise that at first! But now I know it, I’m very excited – 85% Lindt is the ULTIMATE in chocolate to me, so yay!).
The run itself was a bit rum; my legs still feel quite tired and achey 😦 poor things! I was out for about 29minutes and did…a bit over 3 miles, almost 4, somewhere in between, I don’t know! On my way back down the drive, Tig and Chika were eyeing me up somewhat, so I grabbed my camera and took a few photos:

Yeah, not the most amazing ones ever…but at least it’s something 🙂 More later though!
When I got inside, it was Epic Green Monster Time 😀 which we all know and love! The usual mix (it’s on the recipe page now!), but with quinoa milk and a tbsp flaxseed, all topped off with grated cacao, chopped dried dates, granola and jam:
And it was good.
I did about 1.5hrs revision before I decided I’d do run part II – I hadn’t reset my Garmin, so I just left off from where I’d finished, so my total for the day was just over 6.2miles (10.05km to be exact :D), and about 53mins or so. Not bad for a tired person!
For lunch, I had a luffly tofu stir fry – tofu, fried with aubergine, mushrooms, a pear, soy sauce, hoi sin sauce, cinnamon, paprika, garlic and maple syrup, served with some wholewheat cous cous:
Such a brown meal, such a DELICIOUS meal! I love it when tofu gets kinda charred and burnt – it gives it such a good flavah 🙂
For dessert, I had 2 squares of dark chocolate 🙂
In the arvo, it was boring work – but then it meant I got to spend a little bit of my time with my pony 🙂 I gave Chika a good groom:

When I came back in, I worked, did some abs/core work, and had a snack – yet again, soya yogurt and cereal! Oh I need to add a bit of variety to life 😛 I just love this yogurt so. I bought it yesterday, and it’s a new one I haven’t tried:
Vanilla soya yogurt, with loads of funky active cultures added. It’s SO tasty, and you can even see the little vanilla specks in it 🙂 I love that! Anyway, yes, I had it with some cereal:
My dinner was based on something I haven’t had in aaaagges – soya mince! I can hardly remember the last time I had that stuff, which is weird; I went through a phase of having it 6 days out of 7 for weeks on end! Instead of doing it how I normally do, with 1/2 a stock cube, I was a little different – I cooked it up in water/quinoa milk mix, with added cinnamon, cocoa powder, garlic salt, nutmeg and pepper..
I served it with a baked sweet potato, kabocha, leek and parsnip (and garlic and cinnamon etc etc etc):
Oooh! I was mildly impressed 🙂 If I had any skill at presentation, I would have made it LOOK nicer, and not just taste nice. Alas, that is me.
Dessert tonight is my last serving of Greek yogurt!! Along with some dark chocolate 🙂
Now, I urgently need ideas for nice later-in-the-evening snacks!! I have no space in my freezer for ice cream at the moment, so it could be tricky…what do y’all recommend? 🙂
