I created my very own oatbran pancake recipe this morning! I’m tres happy 🙂 In fact, lots of good things have made me happy today:
1) I went for my first [proper] run in about 10 days! 10 days ago, I did a 10miler, and since then I’ve done 2 4mile runs (which were horrible – remember me saying how I cried!?), a 2.4mile run and the odd 1mile. For some reason, I felt like I’d really lost my confidence running, and to be totally honest – I was terrified of running today. I think it’s simply cos my body wanted a running break; my legs were hurting, and I felt like I’d lost all my running spirit 😦 BUT today I think it came back!!
I woke up bright and early, and ate half a Nakd bar:
Before setting out on a 10k. No pressure, I didn’t care how fast I went, I just did it to ease myself back into the running swing. I ended up taking about 52mins ish, and it was lovely 🙂 My legs felt fab! In fact, it was my arms that hurt today (that’ll teach me to do too many press-ups and weights :p), but I can deal with that 🙂 I can’t say what a relief it was!
Whilst I was running, I was thinking about breakfast…and I decided to be a bit creative. Enter good thing 2) Oatbran Peanut Butter Banana Pancakes!
I started by mixing:
- 1/3 cup oatbran (about 40g)
- 2 egg whites
- splash of vanilla extract
- pinch of baking soda
- big splash vanilla soya milk (1/3c – 1/2c, not sure…)
- Pinch of salt
Then I sprayed a pan with the 1cal spray, and poured all the mix in:
Side A above, side B below!
I topped it with an extremely black ‘melted’ banana:
….mixed with a big tsp of peanut butter, as well as grated cacoa and a spoon of my aunt’s homemade blackberry jam:
OH my days, it was sooo good!! I loved loved LOVED the texture, and the topping was out of this world – hot peanut butter flavoured banana? You seriously can’t go wrong!
Gosh. I was blown away!
I washed it down with half a glass of vanilla soya milk too:
I’d forgotten how delicious the vanilla flavah stuff is 😀
After my wonderful breakfast, I had:
Good thing number 3) Chika was very well behaved in our short schooling session (bar one big buck – she’s still got an attack of Spring Fever :p)
Good thing number 4) I did some revision on one of the most difficult topics in cognitve psychology – but it went pretty well! When I had the lecture it made zilch sense, but today, things were starting to click, cogs were a’ turning….yay!
Good thing number 5) A yummy lunch!! Worcestershire sauce roasted brussels, mushrooms, leek, red onion, with spinach and olives:
Alongside a pot of full fat Greek yogurt, with a large 1/2 cup mix of All-Bran, Quinoa O’s and Nature’s Path cinnamon/blueberry:
Totally perfeq lunch IMHO.
There’s something about full fat Greek…I couldn’t have it all the time (waaay too rich, I’d get sick of it!) but every once in a while, it is a nice protein component of a lunch 🙂
Good thing number….I’ve lost where I’m up to now….5? 6? Either way, FINAL good thing is about to happen – a trip to Waitrose! HUZZAH!!
I can’t get enough of that store, and seeing as I’ve run out of my beloved 2% Greek (and my sister has run out of baked beans – shock!), I feel a trip is in order 😀
