Happy Good Friday!
Both officially and not so – as in I’m having a good Friday anyway! Not only is my mamma off from work today (who else has the day off? Any plans!?), but I’ve been mixing it up, food wise 😀 More on that in a sec – before I forget (I do have the memory of a fish), I just wanted to say a big thankyou to all you lovely people that left comments on my last post; you guys were so sweet and helpful and supportive, I really appreciated it. You made me feel much better! I might do a post about portion sizes quite soon actually.
Ok, onto the food now – well, those muffins yesterday..I adored them so much I wanted one for breakfast! Sooo I thought I’d be totally different today and change my routine. ..
For breakfast, I started by making some banana butter, inspired by Katie, with a few modifications. I ‘melted’ half a frozen banana in the microwave so it was soft and syrup-y, and then mixed in a biig tsp of peanut butter, a load of cinnamon and a dash of vanilla extract:
It looks rum, but it was SO good! To go with it, I had a pear and a nectarine (with a load of cinnamon- the packet kind of exploded somewhat, as opposed to sprinkling. ALAS, you can never have too much cinnamon :D):
And a lovely parsnip apple spice muffin 😀 Seriously, they’re so good….I just wanted to keep eating it over and over. I’m so glad I froze them 😀

Gawsh. I was blown away for the deliciousness of this breakfast. Nom nom! A perfect holiday meal 🙂
After all that, I did a bit more revision for an hour or so while my body got busy digesting, then I did my workout (53mins DVDs – exactly what I would have normally done in the morning), whilst watching 60 Minute Makeover (house renovation programme) – you can’t beat crappy daytime TV 😀
Post-workout, I had a Green Monster – 1/2 a frozen banana, a few frozen raspberries, a load of spinach, and 1/2 cup milk:
Perfect post-workout fuel. Then, I went to ride – but poor old Chika is a bit foot sore, and so wasn’t quite sound 😦 I know exactly what the cause is – the farrier was meant to come two weeks ago but he still hasn’t; she needs shoeing!!
So instead, cos obviously I couldn’t ride, I went for a 1mile walk/run with my mum. Love it 🙂
Lunch was simple – stir fried soy sauce aubergine and mushrooms, roasted ketchup broccoli and kale, and the rest of the four cheese tortellini from last night [and a hefty dose of nutritional yeast]:
Super. Who knows why, but the pasta was extra cheesy today…ah well, I’m not going to complain!
