In every sense of the saying! Not only did it pour with rain this afternoon, but Carter got stuck on the stable roof!
Bless him, I have no idea how he got there…but get there he did, and when I went outside to check on my aunt’s horse, Trizeyah (my aunt hacked her over here from her house, then stopped for a cup of tea, leaving the horse outside Chika’s stable), I heard lots of meowing…I look up and there’s poor old Carter! I had to rescue him asap as he was threatening to jump onto Trizeyah’s back (sorry for the brightness of this!):
I guessed jumping from a high distance onto a horses’ back was maaaybe not the best idea (or is that just me?), so I grabbed a mounting block, and let him jump into my arms 🙂 He was SO relieved to be back in the kitchen, with a big bowl of food! LOL.
After all that amazing fun, I was totally ready for my afternoon snack – a hot chocolate and a tub of vanilla probiotic yogurt, with 2 tbsp Grape Nuts (I missed them this morning :():
Hit the spot completly 😀
Then came dinner…oh so good!! I started off by making a parsnip-butterbean mash – I boiled up veerrrry thinly sliced parsnip with some mixed herbs and garlic in just enough water to cover:
Then when they were soft, added in a 1/2 tin of butterbeans, a splash of milk, and mashed away.
Alongside, I had some roast squash and leek, and then for the protein, I headed over to yet another blog for inspiration! www.thefrontburnerblog.com, to be specific. You may recognise this blogger as Emily, who I believe meets up with Kath quite a lot? Correct me if I’m wrong, but I’m quite sure there’s a link there somewhere 😀
Anyway, I saw her recipe for chocolate peanut butter tofu…and need I explain why I chose to cook it!? Chocolate. Peanut butter. Enough said 🙂 I made a few slight alterations to suit my tastes, but the basics were:
- 1/2 tbsp crunchy (real) peanut butter
- 2 tbsp water
- 1tsp cocoa powder
- 1 tbsp soy sauce
- 1/2 tbsp agave
I mixed it all together, then melted it in the microwave so it was runny. Then, I stir fried some turkey, and added the sauce when it was done, so it could reduce and thicken up:
Then, twas all served with the mash and the squash:
Holy CRUMBS, that sauce was INCREDIBLE! Salty, chocolate-y, peanut buttery….seriously, so amazing! That girl has so many good recipes on her blog, I think y’all should head over there and check it out 🙂
Yet again, it’s a case of who needs recipe books, with so many good blogs!!??
What’s your favourite blog (apart from mine, of course :P)? I have so many I read reguarly…it’s hard to keep up! But I love it, blogs are brilliant; so full of ideas, and the girls who write them (and boy! Yes, boys DO write healthy living blogs! They’re a rare thing….) are great, and very inspirational. I’d actually credit healthy living blogs as having helped me turn my life around. When I started reading them, I was still in a pretty crap frame of mind, food/ED wise – but reading blogs opened my eyes to a whole new world. I LOVE THEM!!

I’m not sure that I could pick a favorite blog, I read SO many! Kath’s and Caitlin’s were the first that I started reading and they both changed my life in so many ways. Like you, I had a bad mindset with food and eating and exercise and they completely turned that around.
