Gosh darnit I hate my laptop. It’s done the old dying trick twice today 😦 The second time happened whilst I was eating my dinner and watching episode 3 of Lipstick Jungle – seriously Mrs Laptop – NOT NECESSARY!!
Ok, happier times now!
I thought I’d begin by sharing with y’all the delight that I baked today – chocolate chip coconut pecan bars, off of Allie’s blog!
I followed the recipe pretty much exactly, apart from that I just used good quality dark chocolate instead of carob chips. I won’t list the recipe – you’ll have to check out Allie’s blog 😀 – but here are some pictures…

I broke off bits while I was cutting it up, and gotta say…they tasted pretty darn good! Thankyou Allie!! I want to save them for my mum’s lunches though (yes, I make my mum a packed lunch for work :)) so they’ll be going in the freezer!
In other news, the weather brightened up so the horses got to run around naked again – they made the most of it by getting muddy:
Chika loves the mud – but even the precious princess that is Tig got down and dirrty today!!

After I’d finished sorting them all out and done a bit more revision, I was ready for my afternoon snack. A hot chocolate and a piece of homemade cinnamon raisin bread, half spread with a bit of apple sauce:
I was so glad I found it 🙂 I baked this aaagggges ago, but had totally forgotten about this last slice which had been hiding itself away deep in the freezer. Don’t you just love it when you find treasure in the freezer!??
For dinner, I was craving sweetness. Which meant my beloved sweet potato, baked with cinnamon, garlic salt, agave and a new edition – desiccated coconut!
I saw Tina do this yesterday and I thought it sounded too good to miss – who needs to buy recipe books when you can get all the inspo you need just reading a blog?And even better, it’s FREEEE! Win.
I also had [a bit too much….] squash, leek and parsnip (roasted with agave, cinnamon, s+p and agave and thyme), and trout – panfried with a shallot and garlic, and a good glug of balsamic vinegar (which caremalized before I could take a pic :P). All together:
The trout was very soft and sweet, it went perfectly with the sweet veg 😀
Gosh I love dinner. So many fantastic flavahz, it’s the perfect way to end the day 😀
Actually my all time favourite evening snack is the ULTIMATE way to end the day – something which I’ll enjoy as soon as Supersize vs Superskinny is over 😀
Is that programme shown in the US? It’s super – they have a super skinny trade diets in a feeding clinic with a super sizer, so they have to eat EXACTLY what the other eats….the programme also investigates some diet trends, visits super super large people in the US, as a kind of inspiration to the larger people to lose weight, and follows 4 anorexics on the road to recovery. It’s such a good show! Plus the doctor who does it (Dr Jessen) is PUMPED – he is so ripped and so tall and really quite the fox 😛
Anyway, I’m going to finish watching it now 🙂 I need to concentrate!
Be sure to come back tomorrow though; my mum and I are going to be Ladies of Leisure for a few hours, and ‘do lunch’ in a nice restaurant in town 😀 Can’t wait!

Those fries.. omg.. I saw them on Tina’s blog and I KNEW that i had to try them!! It’s on my list for tomorrow, yum!!! Minus the coconut. I LOVE the flavor of coconut but the texture is odd to me. But I’m a strange one. 🙂 The trout sounds absolutely delicious as well..yummy!

YUMMYYY!!! Feed me those bars! I totally agree I love blogging to because it gives you the opportunity to see kitchen successes and failures and shows you ways to cook rather than just handing you a recipe.
