Phew, it’s the end of Thursday, and not a minute too soon!
Anyone else feel like this has been a tough week!?
I’m feeling a bit better now though – I had my last lecture of the year! Granted I still have a stats computer class tomorrow, but that’s it! No more official learning in my 2nd year….apart from all the revision I have to do :s But let’s focus on the positive!! No more EXTRA learning is a good thing, cos it means I’ll have more time to bake 😛 I’ve missed baking since I’ve been so busy recently. Last year, I was baking 3 or 4 times a week! It’s such therapy. Does anyone else love baking? What’s your favourite thing to bake? I’m all about the cakes personally 🙂 Though after the success of my white chocolate and cranberry cookies, I’m thinking some more of that sort are required….
So anyway, onto the actual day – my last lecturer (who I have a mini crush on :p He’s Canadian and I LOVE his accent!! It sure makes 2hrs fly by :p) let us out 25mins early, so I had extra time! I did a deal with myself – I’d go out for a run (which I reaaaally wanted to do) provided as soon as I got back, i sat down and pumped out 45mins of reading. Deals always work with me – I did exactly as I said!
I did 5k in 24.55 – 8.03, 7.50, 8.10 and a bit more. It was a good run!
Before I left, I had some rocket fuel:
Not strictly needed, but seeing as I’ve run about 8miles today (not my usual 6ish) I felt a few extra calories were in order. Plus, it’s peanut butter – it doesn’t matter how full I am, there’s always space 😛
When I got back, I did the work ‘we’ agreed on, before having my snack. I really wasn’t hungry at all but I’d been thinking about this combo since..oohh breakfast!? So I had to follow through 😛 Coco Brownie Nakd bar, crumbled into a hot cinnamon-agave apple!!
Ohhh my gosh..talk about delicious! The Nakd bar kinda melted slightly, if that’s possible. It was much more gooey, and was just SO TASTY. Washed down with a hot chocolate, that was one fine snack.
It was also a freaking filling snack – I was NOT hungry for dinner. But alas, I ate anyway cos I need to keep my fuel levels up! Plus, I need to empty out my uni freezer a bit….
I started by frying 2 (frozen) veggie sausages with leek, mushrooms, a shallot and cabbage (and a heck of a lot of garlic):
Along with a healthy dose of each of these sauces:
Then towards the end of cooking, I added in some egg noodles (discovered in my freezer some time last night! What a discovery that was – I ADORE egg noodles :D) and some already roasted squash (with a tiny tiny bit of leftover parsnip):
And then Ta Dah! Dinner was served 😀 Though 5 minutes later than the first plan – I was stir frying away, thinking ‘this is taking a blooming long time’, when I realised I’d accidently turned the hot plate off…oops….

Oh you can’t beat a Hugh Jass stir fry, IMHO 🙂

Now it’s the end of the post, almost the end of the evening (well, not quite – it’s 8.10), and you all now how my evening will officially end – my usual nighttime snack and lots more revision!
