Happy Tuesday! Just think, in 3 days, the weekend will be here, wahey!!
On a quick side note – my goodness…I dreamt about Oats In A Jar last night…I think I’m obsessed 😛 But such a delightful dream meant I woke up totally refreshed and raring to go for my morning workout – 53mins of aerobics DVDs (including Jillian part III), and 10mins sit ups/ab stuff. Before I started I had my usual morning snack 🙂 I was more than ready for breakfast after that!!
Seeing as I apparently have such a tremendous craving for OIAJ, I thought I better keep munching my way through my current jar…and you know there’s no better way of having PB than melted onto banana/cinnamon/nutmeg oats :p
Usual oatmeal base, with Quinoa O’s, Cinnamon/Blueberry flax cereal, 1/2tbsp flaxseed, PEANUT BUTTER, 2 tbsp Grape Nuts and an almond cookie for dipping 🙂
Oatmeal in any form never fails to disapoint – it is the Ultimate Breakfast of Champions! Though I haven’t tried baked oatmeal yet – Has anyone else? And what’s your favourite breakfast, while we’re on the topic? (Assuming you do have breakfast!! So many people don’t, but that’s a rant I can save for another day :p)
After breakfast, I drove back into uni – Bah, it seemed so pointless; I had one, 50minute lecture at 1 o clock, and that was it…but it wasn’t too bad. It was a lecture introducing us to our big project/dissertation that we have to do in our final year so it was pretty informative and interesting (shocking news coming from me, I know!!) 🙂 But I’d still rather have been at home, playing with kittens or horses or baking :p (on the subject of kittens, Kovac seems totally recovered now – 1 life down, 8 more to go!)
After my lecture, I had a repeat lunch – tempeh sandwich! It had to be done – the one I had on Sunday was so amazing after all….
Below is lovely Waitrose Organic brown bread, with olive oil spread, thinly sliced courgette and damson jam:
Topped with tempeh and a heck of a lot of spinach:
One big beautiful sandwich!!
On the side, I had some cherry tomatoes and giant strawbugs:
All together – a meal of CHAMPIONS!
It went down a treat 🙂 But now, I’m a blogger on a mission – I’m driving home but on the way, stopping at a lovely farm shop thing to pick up some very British goodies for something that’s going on behind the scenes…that all sounds very mysterious, but all will be revealed in a few weeks!!
