So – Humpday is almost over! I hope you all had good afternoons – I was kept very busy, sorting the horses out, making my lunch and breakfast for tomorrow, washing my hair (I like to make the most of my lovely shower at home. The uni one is skank, so I only have super quick showers there – home is for long lengthy hot showers :D) and drinking hot chocolate 🙂
I took pictures though! Yes – as the kittens are now allowed the run of the grounds (ie, they can go in the garden), I took the opportunity to be snap happy. However, they didn’t want to pose out in the open; they’d much rather hide in the bushes :p
Spot the Carter! He’s in there somewhere 😛 I think their afternoon of play made them tired though – they were sleepy!
So my mum took the opportunity to soak up some kitten lurve…Isn’t my mum beautiful!? I love her 🙂
I also got some pics of the ponies; it was FIFTEEN DEGREES out today (in the USA I think that’s somewhere in the 60s..but I’m not sure) so they were out NAKED! I think they were grateful, cos they both came over for some love when we went out to see them 🙂
Hehe, seeing those pictures make me want to sing that annoying ‘Here come the girls, GIRLS, GIRRRRLLLSS’ song that’s always played in the Boots adverts. Damn I hate that song 😦
When we got inside again, I had my afternoon snack – goat’s milk yogurt and a hot chocolate:
I love how tangy that yogurt is, it’s wonderful 😀
Then came dinner….oohh it was so good! Let me introduce to you:
Peanut Butter Lemon Chicken
Extremely delicious, and extremely simple! All I had to do was combine (for 1 person) 1/2tbsp peanut butter (I used crunchy), 1 tbsp lemon juice, 1 tbsp water and a few splashes (aka 1/4tbsp) soy sauce, as well as a dash of s & p. I also added in some chicken water juices left over from the chicken breast I baked:
Then I just heated it gently, stirring, til it was smooth, and the sauce was done! SO SIMPLE!
For the chicken, I baked it wrapped in foil, but with some water in the bottom – so it kind of got slightly poached and slightly steamed at the same time; whatever happened to it, it was soft and delish 🙂
I also roasted up kabocha, parsnip and aubergine, covered in tomato ketchup, cinnamon, soy sauce, salt and pepper:
The flavours of the chicken sauce and the veggies probably don’t strictly go together…but I wanted to try both, so why not!?
Along with all that lot, I had a small sweet potato:
(Yeah, I did a few too many veggies, if there is such a thing :p)
:O :O :O THE SAUCE WAS AMAZING!! I strongly recommend you cook this; it was very lemon-y, and very peanut buttery. Sounds like a strange combo, but it so so worked! Even my mum approved, and she’s a PB hater – SCORE!
Hehe, don’t you love how sweet potatoes ‘bleed’ when they’re baked? Very endearing.
Crikey. I seriously want to eat that meal again, it was THAT good. What a fabulous end to the day!!
Which is made even more fabulous by two more reasons:
1) I’m watching Masterchef
and 2) I’m going to have my usual dessert in about a half hour 😀 HOORAY!
Here’s hoping everyone else’s evenings are going as fabulous as mine – isn’t it super how good food can just totally lift a day!?
