I hope you’re all having a good Sunday! I’ve been busy busy busy again – I love it! Being busy is my ultimate aim in life, I can’t stand sitting around, not doing anything…bah.
So what have I been up to today – I woke up after a nasty night’s sleep (I have a horrible cold and I couldn’t breathe. Add that to Obama wanting attention at 5am, and 6am, and 7am…does not a good night’s sleep make!), had an apple, tbsp wheatgerm and a square of chocolate before about 50mins of DVDs. Then Hannah and I gave my mum her Mother’s Day stuff (nice fancy girly products 🙂 she was very happy!!), AND we let the kittens outside for the first time EVER in their tiny lil lives! They loved it 😀 It’s just a shame I’m a fool and didn’t have my camera with me, cos they were very cute 😛
Breakfast came very late – not til about 10.45! But it was a variation on my usual- 1/2 cup oats, a ripe pear, cinnamon, nutmeg, and lots o’ glorious toppings: Grape Nuts, Nature’s Path cinnamon/blueberry cereal, Quinoa O’s, tsp chocolate PB, 1/2 tsbp flaxseed and APPLE SAUCE!
Love apple sauce on oatmeal – it’s so so so good 😀
Oh-so-yummy. I VERRRRY nearly had oatbran this morning actually, but at the last minute I switched pack – I was too scared :p I know there’s hardly a difference…but you know what it’s like, when you have something that is so so right, why change!? 😛
I did a bit of revision after breakfast, but no riding – I decided to give Chika a day off – Hannah was in the school with Tig, and I really wanted to go to the horse trials one day event; there wouldn’t have been time to do both. Sooo I quickly made myself a lil packed lunch to take with me (horsey events aren’t exactly known for their Michelin starred cuisine…more like, burger and chips, egg and chips, sausage and chips, cheese and chips, CHIPS…..) – I decided to branch out and be CRAZY with my sandwich fillings 😛
Tuna, cheese (grated cheddar! I thought I should at least TRY and make myself like it :D), half a pear, apple sauce in one half and crab apple jam in the other (and olive oil spread), all in two slices of linseed bread:
I toasted it under the aga, wrapped it up and ate it whilst walking the cross country course – but I got snap happy first 🙂
Awhhhaha what a combination! Even though it was slightly soggy by the time I got round to eating it, the flavours were still there, and they were good! Sweet, juicy, slightly cheesy, with a nice hit of toastyness from the bread. LOVED IT!

I’m really trying to take in extra fuel now (in general, but ESPECIALLY this week – I’ve got a half marathon on Sunday :D), hence the Green Monster! Plus, who can turn one down anyways? They’re amazing! This one was not quite as good as usual though – a whole banana really does bring it to a new level 😀
So anyways, horse trials! I don’t know how much you guys know about them, but a horse trials is a competition which has three phases: Dressage (making the horse go as well as it can, being balanced, doing fancy moves..it’s hard to explain, but it’s KIND of like ballet for horses 😛 looks effortless but is very hard!): Showjumping – jumping about 12 or so jumps in an arena, round a course – you can’t knock any down or you get penalised! – and cross country – jumping ‘natural’ jumps round a course. That bit is the fun bit to watch 😛

Scary drop!! I’ve taken Chika to the top of that drop (when I’ve been cross country training at this venue), and it is a LONG WAY DOWN. In case you’re wondering, no, I didn’t jump off the top!!
That grey horse above is related to Tig (that should win me some brownie points with Hannah for mentioning it – the grey horse is very well known and talented and quite famous!)
Fun way to spend the afternoon! I left at just the right time though – check out the sky….
Those clouds totally burst while I was driving home! Good for me, but not so for poor little Chika, who had been put in the field nekkid again cos it was sunny when I left 😦 poor pony!
When I got home, I decided to randomly do some baking – orange muffins with vanilla buttercream 🙂 (it was a cross of a load of recipes – the muffins were actually an orange cake from one book, and the icing was from a Magnolia Bakery recipe I found on t’internet.) Here’s a little preview:
Hehe I baked a tiny little dinky muffin with the leftover mixture scrapings 😛 The finished product will come later…
For my afternoon snack, I had a hot chocolate and a peanut butter cookie:
I’ve only got one more left!! *MAJOR sadface*
Dinner was half of this glorious pack of tofu:
Smoked and with sesame seeds and almonds 🙂 It had lovely crunchy nutty bits running through it- I approved.
I stir fried it with mushrooms and oyster/soy sauce:
On the side, I had parsnip and sweet potato fries, and kabocha, all covered in lots of agave, cinnamon, s&p, thyme and soy sauce:
All added together: AMAZE!!
I could quite happily eat that whole meal again 😀
I had my usual dessert too, of course 😀 (well, I will do in about an hour…!)
RIGHTO! I will load up the iced muffin cakes in a minute – but I need to ice them first 😀 So they’ll be up soon!
