Has anyone ever seen it? I’m halfway through at the moment, it’s pretty funny 🙂
I decided to have the evening off from work, on my mum and sister’s advice! Seriously, I’ve been SO stressed today, it’s unbelievable….I felt amazing after my run, had a good breakfast, and then did a ton of work…but in between, I kept getting all teary and sad (sorry for the negativeness!) 😦 It’s like all this crazy stress with exams and deadlines is building up and I feel so overwhelmed. I even only managed a TEN MINUTE ride on Chika :O Terrible!! Normally I do minimum half an hour, but some days your heart just isn’t in it, and I knew it wans’t fair on her to keep going when my brain was one big ball of FUDDLE!!
My mum and sister were really sweet though, and gave me lots of hugs 🙂 And my sister invited me to go see The Lion King in London with her! Anyone seen it!? Apparently it’s ace!! I also REALLY want to see War Horse, which has had amaaaazing reviews…If only I were rolling in $$$ (or had won the lottery – did you all hear about the British couple who won £56MILLION on Euromillions!!??? Oh my days.), then I could just spend my evenings going to see amazing theatre performances, or going to the cinema to see Valentine’s Day, or going ice skating, or going to the USA…….
Enough dreaming now! Onto das food 🙂
My peanut butter/banana thing held me over really well all afternoon, so when it came to having a snack, I really didn’t want one, but I felt I should keep re-fueling (as I ran 10miles :p) sooo, I had cereal! 20g each of Fruit n Fibre and All-Bran, as well as a few Oat Puffs – loved the little banana chips, hazelnuts and apple bits in the Fruit N Fibre 😀 I also added a splash of soya milk to it.
After being a milk/cereal HATER for 19 years, I’ve finally come round to the idea – provided it’s not cow’s milk!! Something about the smell/taste of cow’s milk makes me gag..ESPECIALLY on cereal! But I can do soya milk 🙂 This snack was YUM! I also had a hot chocolate of course; I feel like I’ve been neglecting them recently, so it was definetly time to bring them back 😛
Dinner was SO GOOD as well!! I read on www.iowagirleats.com last week sometime about how she had some chicken tenders and coated them in a bit of flour and fried them up. It sounded delicious, so I did my own version 😀
I mixed 1/2tbsp wholewheat flour with two large pinches of polenta (for added crispiness) s&p, mixed herbs, garlic granules, cinnamon and nutmeg.
Then cut a small chicken breast in half so it was much thinner, and put it through my lil dipping station:
Raw chicken, into egg white, into flour mix, onto plate!
I then fried it til it was cooked…
…and served it with kabocha squash (did I mention my baby is back!??) and parsnips, as well as a mix of giant wholewheat cous cous and bulghar wheat.
SO AMAZING! I could have eaten it over and over again…so instead I’ll just post lots more pics 😛
There was a really awesome herby flavour running through the chicken. Gorgeous 😀
For dessert – 2% Greek, a hot chocolate, 1 square of coffee Lindt, and 1 beautiful banana truffle 😀 To. Die. For.
I’ll never get sick of this evening snack/dessert combination 😀
