Ooohhh I had a lightbulb moment driving back to uni last night! You get lots of time to think during an hour drive alone (and at night, so you can’t stare at all the other drivers, as I do :p), so think is what I did. I’ll share my incredible thoughts in a minute. First up…food!
I went to Waitrose and Tesco and got quite a haul:
- Crown Prince squash (not pictured cos I store them in my car :p)
- Butterbeans & chick peas
- A nectarine (yes, just one)
- A kiwi (again, just the one!!)
- Brussel sprouts
- 2% Greek yogurt
- Lots of funky tofu products to try
- A new mug (I’m addicted. But it was big and beautiful and one you can really wrap your fingers round and get cosy with :p)
- Cherry yellow tomatoes
- Red lentils
- Hot chocolate
- Sweet potatoes
- Agave nectar
- And an amazing treat for myself!! I’ll show you what it is when I talk about dinner…I bet you’re excited…
I love grocery shopping 🙂 It worked up an appetite though – which meant I got to try out my giant mug, filling it with a hot chocolate (using TWICE the amount of powder needed, cos it was such a big mug),as well as FINALLY re-trying goat’s milk yogurt.
I had it once before and I hated it – but I had it today and loved it. It had a similar flavour to goat’s cheese as well as a similar tangy-ness, and seeing as how I love that, it makes sense…funny how ones’ taste changes isn’t it!!??
Dinner was simply FAH-bulous! Spinach and ricotta stuffed cannelloni:
I placed all the tubes in a baking dish thing, and covered them in a can of chopped tomatoes, pepper, cinnamon, basil, and this stuff, grated:
Excuse the blurry pic, but it’s basically 100% pure cacao (yes, that’s how it’s spelt) – did anyone see that Willie’s Chocolate Factory programme on Channel 4 a while back? It’s THAT chocolate! It has like, an extra intense flavour or something..cos it’s all pure and lovely :|) (Oh yeah, that was my special present to myself – it wasn’t cheap :s) So anyway, I grated that on:
Then stuck it in the oven for 25mins, til it was bubbly and looked like this:
And I served it with butternut squash and parsnip (and garlic and a shallot):
It was quite simply delightful!! I couldn’t really taste the chocolate, BUT the sauce on a whole was fab, so I figure it’s one of those silent contributor things where it’s added to the flavour, just not in a SMACK-BANG-HERE-I-AM way. 😀
For dessert, I had 2%, a square of Lindt mint flavour (OH SO GOOD!!!) and a square of posh belgian milk chocolate:
And now – My Incredible Thought!!
Well, it’s hardly incredible, but it was a lil moment for me. I was thinking about blogs and the writers, and (in a totally straight way!), how much I love the ladies who write them. I think they’re amazing, inspirtational, beautiful, and incredible. They inspired me when I was ill and they still inspire me now. So it got me thinking about what makes someone beautiful.
Not all that long ago, I thought the only thing that made someone beautiful was the way they looked. Ie, to me, supermodels were the definition of perfection. But after reading these blogs, I’ve realised that’s not true.
In fact, I now think some of the most beautiful women in the world are people like Caitlin (Healthytippingpoint) and Jenna (eatliverun) – why? Because they seem to be so happy and confident and at ease with themselves (as well as being really pretty!). They know who they are, and they love who they are! They are truly inspirational. I’m now thinking THAT is where beauty comes from – the ability to love yourself (in a totally non-arrogant way – no-one likes a stuck-up person :p) and be happy!!
Don’t get me wrong, I’d love to look like this:
But I also know [in the words of Pete Andre :p] what goes on behind closed doors to get super skinny and ‘fabulous’. Those supermodels are blessed with incredible faces, and maybe that’s how their beauty comes out. But I’ve realised that’s not the only way to be beautiful!
I’ve never been confident in myself and I’ve never thought I was attractive, cos all the while I was comparing myself to supermodels and celebrities (who get tremendously airbrushed and wear shedloads of make up….) – but now I’m realising what real beauty is, I think I’m taking steps to become it (if that makes sense)! My sister for example, has lots of boys after her (she reguarly beats them off with a stick, sometimes even an axe or sword when they get a bit feisty) – and I think one of the reasons why is cos she is so happy with herself. Yeah she has crap days (don’t we all…) but on the whole, she’s happy and confident and people love her for it.
I want some of that!!
I want to be truly beautiful! Which means learning to love myself, and discovering who I reaaaally am – blogs help SO much, as I don’t feel like a freak anymore for being passionate about healthy living!! I want to have what Caitlin has, what Jenna has, what my sister has. And now I know how to become it!

It was like a little KERCHING moment in my head when I thought about all this…(except, kerching is related to $$$ and I don’t mean that…).
So yes – that’s my weekly rant!! What do you think makes someone beautiful?
