Happy Valentine’s Day!!
I for one do not like this holiday, simply because I don’t have a boyfriend so I’m a bitter Scrooge 😛 PLUS I think it’s a bit of a scam by the media or whatever to make loads of money out of us….
(*cough, I’m a hypocrite though – if I had a boyfriend, I’d embrace this day in all its’ glory! I’d be baking heart shaped cakes and doing breakfast in bed and going out for nice meals [or just eating more Chocolate Chicken :p)……one day ay!)
Does anyone have any nice plans for today? I have nothing other than work, a riding lesson and a visit to see my Gran! The romance is overwhelming in my household!!
Onto other events:
I did a nice 10k (6.2miles) in 51mins this morning. It was suuuch good weather for it – chilly but so quiet and pretty. Nothing like an early Sunday morning to get the best of it! BUT – I’m a bit miffed; my mum set out for her weekly walk/run a bit after me, and what did she see??
How random is that!? It might not be in Africa or wherever they’re from, but down a little country lane in England..it’s a bit weird.
Anyway – I still had a nice run, despite missing out on that (though I did see a very frozen, very dead rabbit, and an equally frozen and dead deer on the side of the road) – though I did wake up mega hungry this morning!! I think it was cos I was tired (Obama slept smack bang in the middle of my bed last night, so I kind of had to sleep in a weird, twisted position!), so I snacked on an apple, tbsp wheatgerm and this Food Doctor cracker before I set off:

- Lap 5 – 8.12
- Lap 6 – 8.10
- Lap 7 – 1.53
Quite slow…I think I need to do some major speed training! However, thankfully, my legs felt a lot better today too – still a little achey but 10 x better than the day before yesterday.
Afterwards I felt quite fabulous!
If I’d had one I would have served breakfast out of a heart shaped bowl to keep with today’s theme – instead, it was square. But still a mighty fine cube of oats!
- 1/2 cup oats
- 1 cup + a bit soya milk
- 1 banana
- topped with: 1tsp PB, 2 tbsp grapenuts, 1tbsp museli, almonds and raisins
I spent the rest of the morning riding Chika (if there are any dressage enthusiasts out there, you’ll know what I mean when I say, she felt like Totilas!!), and making another batch of raw chocolate vegan brownies:
I also did 13mins of Tae Bo, cos the back of my knee/leg feels weird 😦 Kinda like a tendon or something is ‘locked’..it’s a weird feeling. I thought Tae Bo might help, cos it involves lots of leg extensions etc, so I felt like it would loosen up my leg a bit. Alas, it did not! Itr still hurts. I hope it’s better tomorrow…
Lunch – very random! I had a ton of veggie ends to use up:
Parsnip, crown prince squash, courgette, cherry tomatoes, spring onion, broccoli and brussels! So I created my own dish…I layered some sprouts and the broccoli in the bottom of an individual casserole dish thing:
Then sliced over the parsnip, squash, spring onion and tomatoes, along with s & p, and a good drizzel of balsamic:
Finally, I tore up the last slice of that goat’s cheese and added it on top:
I baked it for 15mins, then sprinkled over 2tbsp oats:
And then gave it another 5mins, before sprinkling over 1tbsp grape nuts, 1tbsp Oat Crisp, and 1tbsp All-Bran!
Goat’s cheese, grapenuts/cereal and parsnip goes really well together (IMHO) – I must make note of that!!
I also grilled some aubergine and courgette, and served it with some tahini and a 100g cottage cheese, mixed with mango and lime juice:
I ended up tipping the pie/crumble thing out onto the plate – far easier to eat!
I may or may not have had one of the freshly made brownies for dessert…Hey, it’s Valentine’s Day and I’m single! We all need some brownie love on this day!!
