Evening folks! Double post time again
I shall start with…
Saturday – Cheesy Times Call for Cheesy Measures
Apples. I like apples. I’ve had two today! One pre-workout, and one post-lunch – you know what they say; ‘two apples a day keeps the doctor away’! Apples are a fabby pre workout snack, cos they give you a little quick hit of carbs and energy, whilst not clogging you down…amazing.
Post-workout, I had a big old Epic Green Monster. Now, I’m feeling the need to switch things up a bit…I love my Epic GM so much, but the same thing for breakfast every day does not make such fun blog reading! So I’m going to start experimenting….I’ve also got an announcement coming up soon, which will change things even more! Anyway, back to breakfast – an Epic GM! Topped with dates, blueberries, sunflower seeds, jam, pumpkin seeds and Lizzi’s Granola:
So good. Except for the sunflower seeds – I don’t really like them, they’re kind of bitter!? Hm. Maybe that’s just me?
After breakfast was dull dull dull, just work.
For lunch, I made a very altered version of Mac n Cheese! Why so? Well, I didn’t use macaroni pasta for one – I used a mix of 1/2 whole-wheat giant cous cous and 1/2 stellette pasta, which was just boiled up. For the ‘cheese’ sauce, I turned to two of my new favourite things – Noosh, and Angela at Oh She Glows! The latter had a recipe for a mac n cheese type thing, so I loosely followed it:
- 1/2 cup milk
- 1/3 cup Noosh
- salt + pepper
- garlic
- turmeric/curry powder
- paprika
- cornflour
All I needed to do was blend it and then add it to the cooked grains, like so:
I then added in some courgette, aubergine and kale I’d just roasted and stirred them through, and served it all with some carrot sticks:
WOW! Amazing! The sauce was nice and spicy, and SO cheesy. I was extremely impressed
And it was packed with protein. Pretty darn good.
After lunch, I had various snacks….the second apple I banged on about earlier, two hot chocolates and some cereal and soya yogurt:
I did try to work, but I was feeling really bad today
I have no idea why – just one of those days I think! In the end, I went for a 1mile walk [to post a letter] and made some banana date balls (Fakd Balls maybe :p):
- 1/4 cup dates
- 1/4 cup sundried banana (no added sugar!)
- 1/3 cup almonds and walnuts
Blend blend blend, roll, wrap:
Job done.
They were very tasty – I made 10 balls, and had some random mess left in the bottom of the bowl, so I ate that and then had one with my dessert later on in the evening
For dinner, it was all about the comfort, carb-loading four cheese tortellini with cocoa-encrusted veggies and grated cacao – TOTALLY hit the spot today!!
Dessert – Greek yogurt, 1 square of Lindt, 1 date ball, and a hot chocolate

Sunday Runday
Sunday is shaping up to be my long run day! Just how The Powers That Be intended it, I’m sure.
Before I did the Long Run though, I had a quick breakfast – Overnight barley flakes:
- 1/2 cup barley flakes (actually, two 1/4 cup servings cos my 1/2 cup measure was in the dishwasher :p)
- 1/3 cup yogurt
- 1/3 cup milk + a bit added in the morning
- 1 sachet instant coffee
- cinnamon
Soaked overnight, and then this morning, I added in melted banana/chocolate peanut butter, and a sprinkle of granola:
[I discovered today I could very easily play around with colour/light changes on my computer…took me a while :p]
Oh yes!
I also had two tsp wheatgerm, and a banana date ball before I set off.
Annoyingly, despite the internet weather saying it would be 7 degrees and sunny, it was actually freeeezing and raining! BAH!!
Anyway, I started by running 10miles, which took about 1hr27 – it was a good one today! My legs felt very fresh and strong, my lungs were good and the time flew by! I downloaded the 3rd Twilight book last night onto my iPod to have something new to listen to, so that probably helped :p Though hardly anything happened in the bit that I heard….I think I zoned out for the first 8miles!
When I got to 10, I met my mum (she managed to find me this time
). Excuse the hair – I’d been in a hat and I’d been rained on for 10miles!:
And we walked about 5miles and a bit back home. On the way, I ate a Nine Bar:
10g protein, about 25g of carb – pretty good!! Gotta refuel right
Overall, I was out for 2hrs51minutes, and did a total of 24.31km (approx. 15miles). Not too shabby! When I got inside, I had a hot chocolate to warm up (it was seriously cold!) and then did some revision
Lunch was the other one of my Super Greasy Tofu Burgers, with some spinach, HP sauce and roasted aubergine/courgette/cherry tomatoes:
Those burgers are good, I just hate the grease all over them
For part II of lunch, I blended a frozen banana, a small carrot, about 50g All-Bran, a splash of milk, and two tsp cocoa powder – topped with a date:
:O! Yes, it looks like some gross thing that begins with a p or a t or whatever you call it – but it was like eating a rich, decadent dessert!! SO tasty! My sister tried some, and she said she liked the flavour but not the crunch from the cereal…but I LOVED the crunch
In fact, I loved it so much, I shall name this dish Chocolate Banana Carrot Crunch Pudding!
The afternoon was spent doing more revision, mucking out, washing hair…all the usual suspects. I did get some baking done though! After (literally) about 20mins trying to decide what I wanted to do, I settled for banana and date vegan muffins, from fatfreevegan.com. I followed the recipe, apart from using 1/3 cup sugar, not 1/2, omitting the walnuts and using maple syrup instead of agave. The result:
I had one as a snack – SO moist and SO tasty! Even my mum and sister liked them, despite their vegan label
A bit later on, I was still feeling a little unsatisfied, so I had a hot chocolate and a banana bread Nakd bar:
Much better
For dinner, I had a total repeat of yesterday’s meal – even down to the plate I used! -, purely cos the pasta doesn’t keep for more than 2days once opened, so I had to finish it

Just scroll back up to the earlier post photos, delete the kale (I have none left) and replace it with courgette and voila
Dessert was also the same….OH I’m so repetitive sometimes!
Anyways – I would ramble on as I have lots to talk about, but I think this post is long enough as it is, so my rambles will have to wait! I hope you all had a good weekend
OH! One quick question – could anyone recommend any really good cameras? Ones that are portable enough so I can snap my food, but will also give me beautiful photos!? My current one is about to die…


Goshhhh, girl – I love the way you think. I don’t think I can say it enough times!! The mac n’ cheese looks amazing – I love the idea of using cous cous. I definitely bookmarked this. I’m missing my “pasta night” tonight and am definitely sure to be craving some this week. Think cheesy pasta may be in the forecast
The muffins also look incredible.
And, no worries – I will NEVER get sick of seeing your Epic GM’s, so if that’s what you want, go for it! The banana date balls also look amazing. I’ve never seen sundried bananas before! Sounds like it would work better than dried banana chips like I’d tried in the past, though
Too bad about the tofu burgers – the flavors sound like they’d be great.
And it’s funny oyu mention something about your sister disliking the crunch in your dessert, but you loving it – I always add something for “crunch” to my dinner/meals – no matter what!! But, if I pass leftovers off to my mom, that is sure to be the ONE thing she will complain about. She says if she’s eating something nice and soft, she doesn’t want anything crunchy to “get in the way.” at the same exact time I’ll be saying “it needed some crunch!” haha.
I’m guessing that your announcement is that you’re going vegan
As far as camera recommendations go, I think you get a lot for your money with the Sony Cybershot range…they’re highly portable and the picture quality is great as long as you don’t drop yours with the frequency that I have mine.

Eats look great as usual and really don’t feel like you have to change what you like for the blog world, and not to be “boring”.
Part II of lunch sounds especially delish even if it does look a bit cowpat like! I’ve cooked lots from the fatfreevegankitchen before and it’s all been great so I’m sure those muffins live up to her standards.

Also… for your hot chocolates… how do you make yours? A mix? I’ve been trying to make mine at home and am experienting with good ways to make them.
Ah I just use Options hot chocolate – 4tsps + hot water and I’m sorted! I’ve only tried a handful of times to make ‘real’ hot chocolate…

SatDay works. Sunday is becoming my long run day too. I have never tried an audiobook–something in my head tells me I NEED music to run, but it´s all for the distraction anyway, so maybe I should try a book for once! And Eclipse gets better, I promise
