After yesterday’s disastrous cornbread, I simply had to redeem myself, in regards to baking!! And seeing as I had a bit of unexpected spare time today (due to the minature lecture), I made the most of it. So, enter -
Cranberry and white chocolate cookies
:O They are so good! And I don’t care if I sound a teeny bit show-off-y, because – in all my many many years of baking – I have only ever made two PROPERLY successful batches of cookies, including this one (by properly successful I mean they all came out right! Not just 50% or one or two). So I’m pleased!
These ones are so soft and melty and amazing….DELIGHTFUL! I’ve frozen them so that my sister can have some when she’s next home
Anyway, here is the recipe:
- 1/2 cup margarine
- 1/2 cup packed soft brown sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1 cup plain flour
- 1/2 tsp bicarb of soda
- 1/4tsp salt
- 3/4 cup cranberries
- 4 ounces good quality white chocolate
Method:
Cream the marg and the sugar, then add in the egg and vanilla and mix it all up. Then stir in the flour, soda and salt til you get a smooth dough:
Then stir in the cranberries and white chocolate til they’re well combined:
Then scoop a tbsp at a time out and place them on an ungreased cookie sheet, 2 inches apart – tbsps give about 14 large cookies.
Bake at 160 degrees (fan oven), or 350 fahrenheit, for 10mins ish, til the edges are JUST browning.
Bring out, allow to sit on the sheet for a minute or two, then turn out onto a wire rack to cool.
SO SO delicious! If you’re from the UK, then it might mean something to you if I say they tasted a bit like Millie’s Cookies

After I’d baked, I was feeling pretty fidgety, so I went and did Part II of Jillian’s 30 Day Shred. That worked up an appetite!! I was going to just have a cookie as my afternoon snack, but I fancied something more substantial – so I had a small serving of All Bran, mixed with some Nature’s Path Cinnamon cereal, and about 1/3rd of a cookie (and a hot chocolate):

For dinner, I was feeling a teensy bit adventerous – I found some frozen mango in the fridge, so I thought I’d do something with that -
Cinnamon Mango Pomegranate Chicken!!
I started off by softening a shallot:
And then I added in some mango, pomegranate seeds, apple cider vinegar, cinnamon and apple sauce (and s&p):
I just let it simmer away for a bit til it became soft and mushy, kinda a cross between salsa and a sauce.
Meanwhile, I had some chicken roasting – when that came out, I re-heated the sauce with the chicken juices to give it a bit more chicken flavour, and then I plonked it onto the chicken, and voila! It was served with sweet potato discs, kabocha, parsnips and brussels (all coated in cinnamon). I HAD planned on having butter beans – til I saw that the sweet potato was on its last legs – and I HAD planned on leek instead of squash, but my mum used up the last of the leek last night :’(. Oh well – it was still super!
Seriously seriously good meal. I recommend you cook this sauce too!!
After that, I did a whole bunch of revision, with a break for my usual dessert (3rd pot of Greek today! o% at breakfast, full fat at lunch, 2% in the evening! Oh, how I spoil myself).
Now I’m going to look up physiotherapists on the world wide web…something about my foot is bugging me, but I can’t put a finger on it. Seeing as I’ve got a marathon later in the year, I’d rather know now!! Do you think that seems like the right thing to do? It’d be a total disaster if I started training, then my foot threw the towel in and that was it! :s

For the physio sometimes you can self refer but your local doctor would also be able to refer you to a local one, and they would also know if you would be better off seeing a sports physio I should think. My PT and GP are both under the one roof so it’s easier!
Those cookies look amazing. I’m not a huge fan of white chocolate but I’m thinking I may try them with dark chocolate

3. I’d definitely get the foot checked out! Me, the Queen of Injuries, would say so. Because IF there is a problem, you can get it worked out now, rather than later. And I commend you on trying to fix it rather than just ignoring it *cough* like i did*cough.
I am no physiotherapist but i do know a lot about injuries to the foot! (since i have had almost every kind there is) haha. Where is the pain (metatarsals, toes, arch, tendon)? Is it a burning pain, or does it feel like you pulled a muscle? And can you send some of those cookies across the pond?

There isn’t a particular pain and I’m not limping or anything, it just doesn’t feel right…It’s hard to explain and that probably doesn’t help lol! I think I’m going to try and find a sports physio :s
I’ll gladly send you some cookies – as long as you don’t mind staleness/reduced to the consistency of sand from the travel

those cookies look amazing. Anything with white chocolate in is a winner in my book! Your dinner looks so yummy too. Your plate is always so full of veggies, how do you eat it all! It must be so yummy!
